Key Lime Cake

Meet Kev’s Mom, Katie…

We’re going to blog about her awesome key lime cake today. It’s soooo good, and we’re excited to share the recipe with you!

Here are the directions, straight from Katie’s kitchen…

For the cakes-

Step 1: Prepare three round 9″ pans by lining the bottoms of each with 9″ circles of wax paper.

Step 2: Grease the wax paper with Pam and then sprinkle with flour.

Step 3: Mix the cake mix, lime jello, oil, eggs, orange juice and water together for 2 to 3 minutes at medium speed.

Step 4: Pour an equal amount of the batter into each of the three lined cake pans.

Step 5: Bake at 350 degrees for 25 minutes.

For the glaze-

Step 6: While the cakes are baking, knead two key limes against a hard surface to loosen the juice inside of them.

Step 7: Cut each of the limes in half.

Step 8: Squeeze 1/4 cup of fresh key lime juice into a small bowl.

Step 9: Pour 1/4 cup of bottled lime juice into the bowl of fresh lime juice.

Step 10: Mix in 4 tbsp. of confectioners sugar.

(I love that the confectioners sugar fell into the bowl in the shape of a heart in step 10!)

When the cakes come of out the oven, and while they’re still warm, use a spoon to drizzle the glaze mixture onto the entire surface of each of them.

For the icing-

Step 11: Mix the margarine and cream cheese together.

Step 12: Mix in the remainder of the box of confectioners sugar.

Step 13: Add the vanilla, and mix until it’s smooth.

Step 14: Remove the first cake from its pan, discard the waxpaper on the bottom of it, and spread a layer of icing on the top of it.

Step 15: Remove and stack the second (wax paperless) cake on top of the first one, and spread a layer of icing on the top of it.

Step 16: Remove and stack the third (wax paperless) cake on top of the second one, and spread a layer of icing on the top of it. Use the remaining icing to cover the sides of the cake.

Place the cake in the refrigerator to keep the icing firm.

Optional Refrigeration Instructions: Immediately cut and serve up several large pieces to your famished family.

    The cake looks wonderful. Thank you for sharing the recipe. It looks like you used regular bottled lime juice and regular fresh limes. I can get bottled key lime juice, but can’t get actual key limes. I suppose it’s ok to just use regular fresh limes?

      Elizabeth, the cake mix box indicates you should get 24 cupcakes and the baking time is 18-21 minutes.

      Elizabeth, the temperature is 350 degrees and baking time for cupcakes is 18 to 21 minutes. Hope you enjoy them.

    Thank you so very much for sharing this Amazing cake recipe! When I saw this post, I knew I had to make this cake, no longer than I thought about who I could make it for and ofcourse enjoy it with, a good friend of mine contacted me after almost a year, and asked if she could come for a visit so our little girls could have a play date, I was so excited and was thrilled to have this cake in the fridge waiting for us to enjoy all together! Let me tell you that we absolutely LOVED it, and I am honestly baking another one this weekend for more company that will be coming for Memorial Day!!!!!     Ohhhh, a few more things…. I forgot to mention how Beautiful the table setting was, and how adorable Kevin’s sweet Mother looks too!!!!!! And Layla, so good hearted all the time, outside spray painting her Mother in laws patio furniture! You guys are so special, All of you!!!!! Great Pic’s too Kevin, so clear and very detailed, and believe me right on target, I made this cake today and you didnt miss a beat!!!! Ha ha Thanks you guys!!!!!!

    Thank you for the recipe! I made this today for a family gathering. It was supposed to rain today and I thought this would be a great way to bring a little summer into our day even if the weather failed to cooperate. The cake was perfect! And, so was the weather.

    I have to tell you, my youngest daughter did not like the frosting. She used her fork to eat every bit of the cake and gave the frosting to my husband. He was thrilled!

    I reposted this on facebook and kiddingly said.. I would make this if I had a oven that worked. /A wonderful friend made it for me and drove two hours to deliver it. She even had to order the key limes since they couldn’t be found where she lives in Nebraska. It was so good!! We now refer to it as the Key Lime Pie Cake.. it is just hard not to say pie after key lime..thank you again for posting the recipe.

    my mom made a key lime pound cake from southern living while we were home visiting them..actually she made three of them..one a week for every week we were there.

    What is the difference between a key lime and a regular lime?? Is that a dumb question, I really want to make this cake for my son this week as a surprise, looks like a yummy cake Thanks for sharing Katie

      Good question! All my super target had was Persian limes, so I used those! Amazing recipe, I don’t think it would make much of a difference. 🙂

    Quick question – do you spoon ALL the glaze over the cakes? I did and then had trouble having it stay sturdy enough to 1)get out of the pan, and 2) ice without parts pulling off. Maybe I did something funny, but, BOY does it sure TASTE great!!!

    Just wanted to say I tried this recipe for our recent family reunion and it was a huge hit! The cake was very moist and the frosting was the BEST I’ve ever had. The cream cheese makes it extra creamy and cuts the sugary sweetness a bit. My daughter loved it so much she requested the frosting for her strawberry birthday cupcakes. 🙂

    I made this cake for Father’s Day… sort of… I grabbed everything I needed from the store except for the lime jello! 🙁 So, I had a box of fat free, sugar free vanilla jello pudding mix in the pantry, and tossed it in place of the jello mix. I used more fresh key limes and even put a teeny tiny, little bit of the rinds in the food processer and tossed a pinch of them in the cake mix. The finished product was awesome! I did not taste a lot of lime, it was definitely a lemon-lime flavor. Can’t wait to try the real thing! Please tell your mother-in law how well it baked, smelled, and tasted! It was such a hit!

    ps… has anyone ever tried this with margartia mix? 🙂

    I really want to make this for my boyfriends birthday. But I have no idea how much icing sugar is in a box. Here in canada you can buy it in boxes, bags and in bulk! Also, how much margarine is equal to one stick? Cake looks wonderful and can’t wait to try it!!
