Cranberry Salad

Since Thanksgiving is right around the corner, I thought I’d share a creamy cranberry salad recipe we had fun making in Katie’s kitchen. It’s super simple and oh-so-delicious!

First, chop up 3 cups of fresh or frozen cranberries, and 1 medium-sized apple…

Put them in a large bowl and then add 20 ounces of crushed pineapple (drained) and 2 cups of miniature marshmallows…

Next, mix in 1/2 cup of sugar (or Splenda to equal 1/2 cup of sugar) and 1 cup of coconut…

Last but not least, mix in 1/4 cup of (chopped) pecans or walnuts, then cover and store in the refrigerator over night. Before serving, fold in 8 ounces of Cool Whip.

Creamy Cranberry Salad

Ingredients

  • 3 c. fresh or frozen cranberries, thawed and chopped
  • 1 can (20 oz) crushed pineapple, drained
  • 2 c. mini marshmallows
  • 1 apple, chopped
  • 1/2 c. sugar
  • 1 c. coconut (optional)
  • 1 carton (8 oz) Cool Whip
  • 1/2 c. chopped pecans or walnuts

Instructions

  1. In a large bowl, combine the cranberries, pineapple, apple, marshmallows, coconut and sugar. Cover and refrigerate overnight. Before serving, fold in Cool Whip and pecans or walnuts.

    Oh, this looks so yummy. I make one like this without apples for Thanksgiving every year. It is always a huge hit and delicious for days after. I am going to try this recipe soon. The apples in it sound wonderful.

    yummy!! It’s a little like a “salad” that we call Ambrosia using plain yoghurt instead of cool whip and usually served with steak.
    If you want to make it a dessert then add some chocolate chips. sooo yummy!

    Oh my gosh, that sounds heavenly! I’m gonna have to leave out that awful coconut stuff. 😉 But I’ll just double up on my pecans and walnuts! I have friends who have a delightful little pecan tree grove. I bet if I whip some of this up for them, they’ll let me mooch all the pecans I could ever want!

    This looks so delicious, and I’m glad you shared! I’m a cranberry addict so I’m definitely going to try!

    Looks like Katie could give Ree a run for her money! 🙂 It’s great that you can get this one-on-one time with your MIL and learn from a great cook. I’m always saying to people, “Celestine Prophecy” (the book), when I am met with issues in my life, good or bad. Meaning the circumstances put in my path are meant to be there and I’m to learn from them, and that I can pull good from bad. 🙂

    I am going to make this, this weekend. No way will I use Splenda. I want it “Katie’s Way”. It simply sounds and looks divine.
    She is such a blessing. You are so lucky to have her as your MIL.
    (I know you know that already). Made me feel good to say it tho. She is a love………………I can tell.
